Ice fishing season begins again and every chance I get you'll see me at one of these units.The portable hut beats the tarp, you can throw everything in the sled, ice auger,heater and your fishing gear.Drag this handy hut to small ponds for speckles or large deep lakes for great fighting lake trout though the hard water, any species of fish these are great products to use. The larger seasonal ice huts are great for the family's. Good warmth,plenty of room to play cards, watch movies, of course this is when the fish are not biting, or just enjoy the beautiful scenic view in front of you from sun up to sun down you gotta love the winter time for hard water fishing.

Wild Duck

1 duck
1 onion sliced
1/2 cup of butter
1 bay leaf
2 cups of water
1 cup sliced mushrooms
2 tablespoons of flour
1/8 teaspoon of thyme
salt and pepper

Prepare, Brown duck with onion in butter. Add salt,pepper,water and bay leaf. Cook slowly for 1 1/2 hours. Saute mushrooms. Add flour and thyme. Add to duck. Cook 30 minutes more. Serve with rice and nice glass of red wine.

TURKEY SEASON 2008

In the last three year's l've started my four day turkey hunt with the bow.

But, always had no luck, Just hens coming into my decoy or the Toms would stay a distance away for my bow. So this year my strategy was to take a bird first with my shotgun, then use the bow. It payed off the first day. I took a nice jake.

The next three days with the bow I was back to the same routine, Just hens at the decoy and Toms a distance away. Also the rain was a factor again, Maybe even the Toms just don't like me with my bow. Oh well, still had a great time with the Just Us Hunting crew.

Good meals and lots of new and old stories told. Looking forward to next year.

Baked Walleye

1 1/2 walleye fillets, cut in serving portions
2 tablespoons of chopped fresh parsley
2 tablespoons of melted butter
2 tablespoons of lemon juice
1/4 teaspoon of dried dill weed
salt and pepper for taste

Laying fillets flat, in baking sheet, sprinkle salt and pepper for taste.
Combine parsley,melted butter,lemon juice and dill weed and pour over fillets.
Bake in oven at 425F for about 10 minutes, or until fish gets alittle colour.
Broil for 3 to 5 minutes longer, or until golden. Serves 4

Time to sit down with the boys and girls on discussing group numbers and wildlife management unit locations.The deadline for moose hunt applications in Ontario is June, 2, 2008.

Comparing the numbers from 2007 to 2008, The moose validation tags are down and the group numbers are up for the rifle and archery season.For more information check the Ontario hunting regulation summary 2008.And good luck to all you folks.

MOOSE MEATBALLS

1lb of moose meat
1 clove garlic
pinch of oregano or parsley
salt & pepper
1 or 2 eggs
1 to 1 1/2 cup of bread crumbs
1/4 cup grated Parmesan cheese

mince garlic fine. Combine all ingredients, adding bread crumbs as needed.
Don't get mixture too dry, shape into meatballs. Drop raw into spaghetti
sauce or cook in oven on cookie sheet at 300 for approximately 1/2 hour.

Spring is here and another year of entertainment from our furry black friends from the woods is yet to begin.

In the next couple weeks, black bears will be up and about, roaming for food and making their tracks back into the northern communities of Ontario. Since the closure of the spring bear hunt in the 1990's, the black bear population has rapidly exploded to high numbers. Of course, the Ministry of Natural Resources will never admit there is a bear problem, but has spent millions of dollars on their bear wise program. Yep, bear problems not here!

Turkey Season

A couple days ago I was going through last year's deer hunting footage , I had a flock of birds stroll by my tree stand in the winter wheat, and it just dawned on me that another turkey season approaches. So for the next couple of weeks my lovely wife and daughter are going to have to put up with my yelping, clucking, putting, purring, and high pitch crackles, while I practice in the basement again. Good thing moose season is in six months. It will give their ear drums a break.

Lake Trout Poached in White Wine

2lb. lake trout fillets ~ 1/2 cup whipping cream

1/2 lb. sliced mushrooms ~ 1 cup water

1 onion sliced ~ 1/2 cup grated Swiss or Mozza cheese

3 tablespoon butter ~ Salt and Pepper

1 cup dry white wine ~ Lemon juice for taste

1 tablespoon flour

Melt 2 tablespoons of butter in saucepan and add mushrooms and onion. Stir until cooked.
With another saucepan, layer fish fillets with cooked mushrooms and onions. Pour wine and water
over and bring to simmer( not boil). Simmer for 8 to 14 minutes. Remove fish and keep warm in
shallow baking dish. Strain liquid and reduce to half of volume. Beat 1 tablespoon of butter and 1 tablespoon of flour into a paste and slowly add sauce until it thickens. Add cream, then salt, pepper
and lemon juice for taste. Pour sauce over fillets in baking dish. Sprinkle with cheese, place under
broiler until lightly golden. Makes 4 to 5 servings.

The season started off well, with the ice huts on nighthawk just after christmas. Snow and slush conditions were minimal, which made the trout lakes a pleasure to snowmobile on. And with the help of the fish gods we were able to enjoy some crispy cooked fillets. So here are some still photo's results of the ice fishing season.

1st monthly recipe

Marinade Venison

1/2 cup of red wine
3 cups of water
1 cup tomato or apple juice
3 tablespoons of sugar
1/2 teaspoon of salt
1/4 teaspoon of pepper
1/2 cup of chop celery
1 onion
1 bay leaf
1 clove garlic
keep in marinade for 24 hours. Turn frequently. Save marinade for basting. Bake at 325 for 30 minutes.Baste every 15 min. with hot marinade. Bake 20 to 25 minutes per pound. serve and enjoy with a glass of wine or bottle of lager.

Every trip we have made at our ice hut on Nighthawk Lake, has been quite successful. I've probably seen more walleye come through the ice this year then in the last three years which is a good sign. There still a high population of sauger in the hawk, and are good eating. Also many large pike patrol the area and leave there mark, the broken line trick. The Nighthawk will host up to 150 huts or maybe even more from December to March. So the hawk still has lots to offer.
